Our ingredients travel

Chef Marco trained in Vancouver and Lyon before returning to his home province to open The Copper Table in 2019. His philosophy is simple: extraordinary ingredients, treated with respect.

Every dish on our menu features produce from farms within 100km of Nelson — partnerships with growers in the Creston Valley, the Slocan, and the Arrow Lakes that we’ve built over five years.
